I’m eager to start our Christmas tradition of home-made gifts – but this year I am making pasta and cookies or rocky road and so I can’t start until the 23rd/24th of December. It’s put me in a bit of pickle as I am in the mood but can’t do much about it except make the rhubarb pickle.
Sliced rhubarb pickle goes nicely with cheese, in sandwiches and certain salads.
I doubled the quantity of the recipe I blogged semi-recently to fill 7 300 ml glass jars. I added 7 star anise and cloves, and 14 all spice berries so that each jar had one star anise, a clove and 2 all spice berries.
