This post goes to show that ‘You Never Can Tell’ what your day will bring! As I sat down to sip on a nectarine bellini (to congratulate myself on the surprise of a blogging award and also to edit the photos to go with the blog post for the bellini), a quick look on Facebook meant that I also discovered the death of Chuck Berry. Then a text from mum – Berry was the same age, same day as my grandpa Hughie when he died.
So this recipe is for 2 greats: Hughie Coyle and Chuck Berry – here’s cheers!
You will need to buy peach or nectarine nectar, or pour some warm light sugar syrup over some halved necatarines the day before. Stephanie Alexander’s from the Cook’s Companion is a good one: 1 part sugar to 2 parts water in a saucepan over medium heat and stir until sugar dissolves. Leave to cool slightly and pour over nectarines.
Pour a shot of nectarine syrup into a champagne flute.
Top with sparkling white.
