These muffins are the moistest muffins you will ever have! I love the earthy – but sweetish – taste of the beetroot too – a great substitute for sugar here. If you don’t want a slight pink tinge on your fingertips for a little bit, wear gloves when you grate the beets!
I made these awhile ago when we had excess beetroot – and I think I will make again with some of this season’s lot.
