We have a few beets that are ready in our garden at the moment. I love beets to add colour to salads and also baked, wrapped in aluminium foil, with some vinegar and salt and pepper.
Their leaves are also great to use in your salads. I find growing your own veggies makes you more resourceful with what you have to save a trip to the shops. Beetroot leaves make a worthy substitute for spinach, rocket or lettuce (or alongside) in your salads and sandwiches.
Silverbeet is another green that is a great substitute for spinach. The link is to another post I did awhile back on times when silverbeet can be used instead of spinach.
