make friends with salad – silverbeet, spinach substitute

Growing your own food makes you consider replacing like vegetables with like vegetables to save a trip to the shop. Silverbeet is a great substitute for spinach. It is easy to home grow and comes in a range of pretty colours (rainbow chard) which can brighten up your salads. I use it a lot to replace spinach; in salads, sandwiches for work, in vegetarian curries and in spanakopita (https://crichtonscoop.wordpress.com/2016/06/13/i-span-so-far-away/). If eating fresh, it is best to use young. If it’s getting a little older, finely chop to reduce it’s toughness. If cooking, use the same method as you would with spinach.
