This is a great trick to finely slice or dice onions:

preparing for slicing or dicing:

If using the whole onion, with the skin on, chop off one of the ends about 5 mm in. Then chop the onion in half. If only half a onion is needed, chop the onion in half and then chop off one of the ends 5mm in. Peel.

finely slicing:

Holding the non-chopped end with your non-cutting hand, finely slice the onion. Use a sharp knife and tuck your fingers of your non-chopping hand in.

finely dicing:

Prepare the onion as preparing for slicing or dicing. Going against the rings, and not all the way to the end of the onion, cut vertically along as small as you would like the diced onions to be. Turn the onion so that you can hold the non-cut end with your non-cutting hand. Finely slice the onion. Use a sharp knife and tuck your fingers of your non-chopping hand in. As you have cut both ways, you will end up with diced onions.
